Lentil, Carrot and Leek soup
Ingredients
- 3 carrots, diced
- 2 leeks, diced
- 1.4l veg stock
- 300g lentils
- salt (to taste)
- 1tsp rosemary (or more, to taste)
Method
- fry carrots and leeks in a large saucepan until soft
- add the stock, rosemary, salt, and lentils.
- boil for ~20 minutes, stirring occasionally. Add more water if needed.
Notes
this is way too easy to make for how incredibly tasty it is. Would likely still be great with other veggies, too. Experiment!
