lentil and carrot pasta

Method

  1. dice carrots and onion finely.
  2. fry in a large pan for 5 minutes or so.
  3. add stock, lentils, tomatoes, herbs, salt and pepper to pan.
  4. simmer for 20-30 minutes. add more water if needed.
  5. while simmering, cook pasta according to how you cook that pasta.

Notes

this is nice and easy and tastes good. I think it might be bolognase-adjacent?
