lentil and carrot pasta
Serves 4
Ingredients
- 300g dry red lentils
- pasta (any, your choice, as much as you like)
- 2 onions
- 3-4 carrots
- 800ml or so veg stock
- 1 can chopped tomatoes
- mixed herbs, to taste
- salt and pepper to taste
Method
- dice carrots and onion finely.
- fry in a large pan for 5 minutes or so.
- add stock, lentils, tomatoes, herbs, salt and pepper to pan.
- simmer for 20-30 minutes. add more water if needed.
- while simmering, cook pasta according to how you cook that pasta.
Notes
this is nice and easy and tastes good. I think it might be bolognase-adjacent?
